:: Shortbread mold

Christmas shortbread mold from Danescook. Make a classic shortbread using the following recipe:
1/2lb of butter
1/2 cup of icing sugar
1/2 cup of cake flour
1/4 cup of rice flour
1-1/4 cup of all-purpose flour
1/2 tsp salt

Blend butter in food processor until very creamy.
Add icing sugar and salt - blend until throughly mixed.
Add rice flour and cake flour and blend again until mixed in.
Add half of all-purpose flour and blend in.
Add the balance of flour - blend until a soft ball is formed.
(ingredients can also be blended by hand.)
Take dough and press into shortbread mold.
Bake at 350F until light golden in colour. Cool slightly. Remove from mold and sprinkle with granulated sugar while still warm. Cut into wedges.
